We invite you to a workshop based on the research conducted by Proyecto Parutz’ on the milpa, forests, and the kitchen as political spaces that sustain a shared existence. During this workshop, we will explore how food management—whether in the fields or through transformation in kitchens—goes beyond the concrete act of eating. Therefore, it transcends the logic of constructing a palate that confines food within aesthetics and the affirmation of flavor based on parameters defined by the West.
Parutz’ is a research, action, and dissemination project that studies and analyzes the ability of Indigenous peoples to create a knowledge production system around food systems. The workshop will be led by Edizon Cumes, researcher and founder of the project.
